Ingredients
  

Crumble topping

  • 80 grams unsalted butter
  • 1/4 cup soft brown sugar
  • 1 cup rolled oats
  • 3 tblsp all purpose flour
  • 1/2 tsp ground cinnamon
  • 1/8 tsp salt

Plum Cake

  • 130 g unsalted butter room temperature
  • 1 cup granulated sugar (200 grams)
  • 3 medium eggs
  • 1 tsp vanilla extract
  • 2 cups all-purpose flour (300 grams)
  • 1 1/2 tsp ground cinnamon
  • 1/4 tsp ground nutmeg
  • 1 tsp baking powder
  • 1/2 tsp baking soda
  • 1/4 tsp salt
  • 1 cup milk (250ml) At room temperature
  • 1 Tbsp apple cider vinegar
  • 300 g plums or other stonefruit Quartered or sliced, stones removed

Instructions
 

  • Preheat your oven to 180°C (356°F). Grease and line a 23cm round cake tin.
  • Make the crumble- Melt the butter in the microwave or a saucepan on the stove. Add in the rest of the ingredients and combine into a crumbly mixture. Set it aside.
  • In a large bowl sieve together the flour, cinnamon, nutmeg, baking powder, baking soda and salt and set aside
  • In a stand mixer bowl add in the room temperature butter and the sugar. Beat until thick and creamy. Add in the eggs one at a time, beating well after each addition. Stir in the vanilla.
  • Mix together the milk with the apple cider vinegar.
  • Fold dry ingredients into the butter mixture, alternating with the milk. Don't over mix.
  • Spoon the batter into the lined tin. Place the cut plums on top, cut sides facing down.
  • Bake the cake for approximately 45 minutes until a skewer inserted in the middle comes out clean.

Notes

I use NZ cup sizes, which are larger than US cups. If you have a smaller cup, it is best to use the gram amounts listed instead to avoid any over or under measuring.
