An easy broad bean pesto recipe with basil, mint and almonds.

You can make this recipe from broad beans you have grown at home or from the shop.

Depending on where in the world you are, you may call these fava beans, in which case, enjoy this fava bean pesto!

Bring a pot of water to boil. Remove the broad beans from their pods and simmer for 2 minutes.

Drain and allow to cool.

In a blender, combine the broad beans, herbs, almonds and salt and blitz until roughly combined.

Add in the Parmesan and enough oil until it reaches your desired consistency. You may need to scrape down the sides a few times.

Store in an airtight container in the fridge for up to a week

Or in the freezer for up to 6 months.
