Elevate salt to a whole new level with produce from your garden and create homemade flavoured salts.
Flavoured salts can brighten up a meal ten-fold, and when you make it yourself you can adapt, tweak and discover amazing flavour combinations.
In this post I have made a Chili, Lime and Garlic Salt, a 'Lemon Pepper' Salt made with lemon and lemon balm, plus an 'Everything' Herb Salt.

The lemon and lime peel and the garlic take the longest to dry, though time depends on how thinly they are sliced. I had my herbs dried in about an hour and the fruit peel and garlic took about 3, all at about 65-70°C.

The chilli I used was from last year so this had naturally dried already. Obviously all the ingredients I just listed can be purchased already dried, but then this wouldn't be a real homemade gift now would it!

Then they're just blitzed up with some rock salt!
Salt Flavours
Chilli, Garlic and Lime Salt
225g Rock Salt (about ¾ cup)
Sliced and dried peel of 2-3 limes
4 cloves garlic sliced and dried
1-2 dried Chillis
'Lemon Pepper' Salt
225g Rock Salt (about ¾ cup)
1 cup lemon balm leaves, dehydrated
Sliced and dried peel of 2 lemons
2 tablespoons cracked black pepper
'Everything Herb' Salt
225g Rock Salt (about ¾ cup)
2 cups mixed herbs, dried (thyme, marjoram, oregano, basil, mint, sage, rosemary, parsley...)
4 cloves garlic sliced and dried
